Full English (my version)

When I crave a ‘full English breakfast’ this is what I go for.

Eggs are such perfect little nutritious packages… Protein, healthy fats, all 9 essential amino acids, plus vitamins A, D, E, B12, folate, iron, selenium & choline, as well as antioxidants lutein and zeaxanthin. They’re the key player in my diet and so versatile!

Here I’ve scrambled my eggs, but do yours however takes your fancy. Keep an eye out for my videos on ‘how to’ with eggs for tips on the perfect omelette, scramblies, poached, & soft-boiled eggs.

Ingredients:

3 eggs

2 tsps of butter

1 large Portabello mushroom (or 2 smaller)

2-3 large tomatoes

2 cups of baby spinach

1/2 Avocado

1 tsp of fresh thyme

Salt and pepper

Method:

3 eggs - scrambled - combine the raw eggs with a fork, add to a frying pan with a teaspoon of melted butter and cook over a medium heat, stirring for 3-4 minutes

1 cup of chopped Portobello mushrooms - pan fry for about 5 minutes in a teaspoon of butter or avocado oil with a little thyme, season with salt (sea or Himalayan) and black pepper.

1 - 2 grilled tomatoes - season with salt, pepper and a pinch of coconut sugar and grill for about 6 minutes (in the picture I’ve served with a tomato sauce - recipe in the Pizza recipe)

2 Rashes of bacon - I find the air fry best for cooking bacon.

To Serve:

Prepare all components as outlined above and serve on a bed or 2 cups of baby spinach (or other greens) and 1/2 an avocado.
