Pizza night!

I Love Pizza……it’s our Friday night ritual - snuggling up with my beautiful girl with pizza, movie, & popcorn…what’s not to love?! So, I needed to find a gluten free alternative and I pack as many veggies on there as possible and make the most delicious pizza sauce - it’s such a treat! After trying many pizza bases, and lots of experimentation (failed) I’ve resigned myself to buying the Pams Super Food pizza bases from New World, which is the best I’ve come across so far.

Prep time 10 minutes Cook time 50 mins (including tomato sauce) Serves 2

Ingredients

For the tomato sauce

  • 1 x 400g tin of organic tomatoes or 2 -3 cups of cherry tomatoes

  • 2 cloves of garlic - bashed to squash them

  • 1 tsp of Himalayan salt

  • 1 tsp of coconut sugar

  • 1 tbls of balsamic vinegar

  • 1/2 tsp of smoked paprika

  • the leaves of a small sprig of oregano (or 1/4 tsp of dried)

For the pizza (of course you can put whatever you please on it, but this is what we have)

  • 2 x pizza bases (we like the Pam’s gluten free superfood bases available in New World here in NZ)

  • 2 tbps of the tomato sauce (above)

  • 1/2 a red onion - thinly sliced

  • 1/2 courgette - thinly sliced

  • 1/2 a red pepper - thinly sliced (I use frozen in the winter to avoid spending $6 on a pepper!)

  • 4 basil leaves - torn

  • a hand full of baby spinach leaves

  • 2 Portobello mushrooms sliced

  • 4 slices of prosciutto ham - torn

  • 5 cherry bocconcini (mini mozzarella balls) - torn

  • 1/2 cup (45g) of grated parmesan

  • 1/2 cup (45g) of cheddar

Method

  • Add all the ingredients for the tomato sauce into a sauce pan, bring to the boil and simmer until the sauce is thick and reduced, about 40 mins

  • Prepare all the toppings and preheat the oven at 220˚C

  • spread a tbls of the tomato sauce on the pizza

  • follow by the vegetables (I place them in this order: red onion, courgette, peppers, basil, mushroom)

  • Add the prosciutto followed by the cheese

  • Pop in the oven until cooked - i like mine a little browned, as shown in the picture, which takes about 10 minutes in my oven
