Healthy(ish) cornflake crispy buns.

I modified this recipe from one we used to make as kids - from my first ever cookbook! I swapped out the golden syrup for rice syrup, ditched the sugar and added chia seeds… and it works perfectly!

Ingredients

30g or butter or coconut oil

1 desert spoon of raw cacao

1 desert spoon of rice syrup

1 tsp of vanilla paste

1 tbls of chia seeds

a pinch of salt

3 cups of cornflakes (I use the gluten / refined sugar free ones in the picture)

Method

Melt the butter in a pan over a medium heat

Take off the heat and add cacao, syrup and vanilla and stir to combine

Add the chia seeds and salt and stir again

Add cornflakes and stir until they’re all coated with the chocolatey gooey goodness

Divide between some muffin cases and pop in the fridge to set
